Pizza Genius!
I tried a great little pizza recipe out last night, courtesy of British celebrity chef extraordinaire Jamie Oliver. I think Jamie Oliver’s pizza recipes are particularly great as he never overcomplicates things but instead sticks to classic simple flavours. This recipe in particular has won me round and I think I may now have to add smoked pancetta to my previous list of favourite pork pizza toppings. The key to what makes this recipe great is using fresh produce, so I made a trip to my local market yesterday to purchase some lovely organic fresh tomatoes and mozzerella. Jamie Oliver’s Pizza Recipe
Ingredients:
• 6 tablespoons tomato sauce
• 85g mozzarella
• 1 fresh red chilli, finely sliced
• sea salt and freshly ground black pepper
• 4 or 5 slices of smoked pancetta, thinly sliced
• extra virgin olive oil
Method:
Smear the pizza base with tomato sauce. Rip the mozzarella into pieces and scatter these over, then sprinkle over as much chilli as you like and season with salt and pepper. Place the pancetta over the top so it will crisp during cooking and the juices will seep into the pizza. Drizzle with extra virgin olive oil and cook until crisp and golden.
And voila! A Jamie Oliver pizza classic!
