On the side
It’s been established: I could eat pizza every week, either at lunch or dinner and occasionally cold after a late night out on the town! But despite my undying love of this frisbee shaped treat, even I sometimes crave a little green on the side to compliment the main attraction. I also am not completely unaware that my five-a-day vegetable quota needs to be met, or at least aimed for! So, when I feel some vegies are called for, or I have friends over for some pizza and want to show my home cooking skills are not completely lost, I make some salady sides to complete the feast. Anyway, it’s really not worth spending the money buying a pre-made salad because this type of home cooking is easy and quick and undoubtedly tastier.
Easy home cooking ideas
Here are a few tips to get you started when you want to serve something along with your pizza. Much easier than my last post about DIY wood fire ovens, so why not save that until summer and embrace an altogether easier cooking task today!
Mixed leaf green salad – use what you have on hand and toss together in a salad bowl with a simple vinaigrette dressing
Rocket on top – home cooking made easy – no need for any prep or even extra washing! Top your favourite pizza (mushroom and prosciutto pizzas toppings work best) with a handful of rocket and enjoy you salad and main in one go.
De-glazed radicchio – a classic Italian ingredient sometimes found on pizzas and other traditional dishes like risotto. Home cooking has never been quicker when all you need to do is heat a small amount of olive oil in the pan, toss in the quartered radicchio sections, as the sizzle drizzle with balsamic vinegar, season with salt and pepper and slide onto plate. This all takes a matter of minutes.
Dressed asparagus – blanch some asparagus quickly in boiling then cold water. Drizzle with vinaigrette and a bit of salt.
